© Graeme CaseltonScotch Bonnet Very closely related to the Habanero chile, the Scotch Bonnet (or Bahamian, Bahama Mama, Jamaican Hot or Martinique Pepper) is just about as hot. Heat level is 9-10. It has a similar apple-cherry tomato flavour. Like the Habanero, it is spherical, although rather more squashed in shape and it is smaller, 3.25-4 cm in diameter. Native to the Caribbean, it is available in the UK in green, yellow, orange, white, brown and red as well as multi-toned. It is great for salsas and sauces. (Capsicum chinense). 120 days. 300,000 SHU
Seco Del Norte The ripened and dried Anaheim chile. Light brownish red colour. Sharp slightly acidic flavour with mild heat.
Secret F1 Hybrid This is a bell pepper that matures from purple (65 days) to red (90 days). 3-4 lobes. Resists TMV.
Senorita Jalapeno F1 Hybrid 7.5 cm dark green Jalapeno type. 60 days to ripen, turning from green to red at maturity. Heat level at 300-400 Scoville units compared to normal Jalapeno level of 5000 SHU. Resistant to TMV.
Sentinel Hybrid sweet pepper. An early-season variety, Sentinel is ready for harvest in just 68 to 72 days. Its tall, productive plant delivers impressive yields of blocky peppers. Harvest at green or red maturity. Fruit shape is 4-lobed. Blocky. Fruit size is 4.25 inches by 4 inches. Fruit Colour is green to red. Disease resistance/tolerance is to BLS1,2, TMV, and PVY.
Serranito [seh-RRAH-ne-tow].
Serrano [seh-RRAH-noh]. The Serrano, meaning 'from the mountains', is native to Mexico and south-west America. Heat level is 6-7. It is widely believed to be the hottest chile by many Americans who adore it in its red or green form (see Habanero and Cayenne). It can be best described as bullet-shaped. Two similar-sized species are widely available, Balin (pellet) and Tipico (typical) in the USA. Both are quite small, only 2.5-5 cm in length and 1.25-2 cm wide. A larger, double sized species (Largo) is only found in Mexico. Serranos have yet to be exported or cultivated outside the New World. It belongs to the group that Alvarado Tezozomoc mentioned of chiles planted on elevated platforms by the Mexicans during their pilgrimage to Tenochtitlan. It adapts easily to different climates and altitudes, which allows it to be cultivated in all chile producing regions of the country. There are around 15,000 acres planted in all the country, mainly in the states of San Luis Potosi, Veracruz, Nayarit, Hidalgo and Tamaulipas. It is also planted in other states but on a smaller scale. One particular area that has resulted as a very favourable environment to plant it is Santiago Ixcuintla, in the state of Nayarit. The plant develops very well in this region and under idea conditions it grows up to one and a half meters and reaches up to 10 blossoms per harvest. 10,000 to 23,000 SHU. Can be threaded on string and dried for a colourful ornament. (Capsicum annuum). The red chiles are usually sweeter. Susceptible to Serrano golden mosaic bigeminivirus.
Serrano Huasteco This improved Mexican Serrano has longer fruits, a more uniform conical shape, and thicker walls than ordinary Serrano cultivars. The 3 foot tall plants have improved pod production, leaf cover and disease resistance to PVY, TEV and PMV. The name Huasteco refers to the indigenous people of important Serrano producing areas in Mexico. An all purpose chile for heat lovers, Serrano Huasteco is not only fiery but also very flavourful, and most popular in Mexico City's markets . 78-80 days.

Serrano Seco de Yucatan A regional variation of the Serrano Seco chile. Light yellowish-orange, tapering to a point and measuring up to 2 inches long. Very thin fleshed with a tart and bitter flavour. Heat level is 7.5 From the Yucatan and Veracruz regions of Mexico.
Serrano Tampiqueno Different plant habit than other peppers, with silky leaves and small, conical fruits. Very hot! 80 days. (Capsicum annuum).

Siling Labuyo Probably the most common Philippino chile pepper that's cultivated, it's a small pointed pungent Capsicum frutescens, similar to Zimbabwe Bird. Grows to 1/2 inch and matures to red from green. Local names include Lada (in Bicol dialect), Paktiu (in Ifugao dialect), Silit-diablo (in Ilocano dialect), Chileng bundok, Siling palay, Pasitis, Pasite (in Tagalog dialect), and Katumbal, Kitikot and Siling kolikot (in Visaya dialect). Szechuan Not introduced to China until the sixteenth century. A number of chiles now grow there, including Ngau kok tsiu (a type of De Arbol), Fan Chiew tsiu (a Dutch type), Tse tin tsiu (a Mirasol type). The hottest, which is simply called Szechuan in the West, is probably a Cayenne type. In China it is called Tsim tuk laat tsiu or Rajiano. It is pungent and grows between 5-10 cm in length and 6 mm-1.25 cm wide. Heat level is 8.
