The Serrano, meaning 'from the mountains', is native to Mexico and south-west America. Heat level is 6-7. It is widely believed to be the hottest chile by many Americans who adore it in its red or green form (see Habanero and Cayenne). It can be best described as bullet-shaped. Two similar-sized species are widely available, Balin (pellet) and Tipico (typical) in the USA. Both are quite small, only 2.5-5 cm in length and 1.25-2 cm wide. A larger, double sized species (Largo) is only found in Mexico. Serranos have yet to be exported or cultivated outside the New World. It belongs to the group that Alvarado Tezozomoc mentioned of chiles planted on elevated platforms by the Mexicans during their pilgrimage to Tenochtitlan. It adapts easily to different climates and altitudes, which allows it to be cultivated in all chile producing regions of the country. There are around 15,000 acres planted in all the country, mainly in the states of San Luis Potosi, Veracruz, Nayarit, Hidalgo and Tamaulipas. It is also planted in other states but on a smaller scale. One particular area that has resulted as a very favourable environment to plant it is Santiago Ixcuintla, in the state of Nayarit. The plant develops very well in this region and under idea conditions it grows up to one and a half meters and reaches up to 10 blossoms per harvest. 10,000 to 23,000 SHU. Can be threaded on string and dried for a colourful ornament. The red chiles are usually sweeter. Susceptible to Serrano golden mosaic bigeminivirus. (Capsicum annuum)

Open-pollinated Serrano pepper, with fruit that is twice the size and two to three weeks earlier than the original. Peppers are fleshy and meaty with a unique Serrano flavour. Measuring about 5,000 Scoville units, they are about the same pungency as a Jalapeño. Fruit is about 3-inches long and 1/2 inches wide and green, maturing to a bright red. 64 to 67 days. Serrano Huasteco   This improved Mexican Serrano has longer fruits, a more uniform conical shape, and thicker walls than ordinary Serrano cultivars. The 3 foot tall plants have improved pod production, leaf cover and disease resistance to PVY, TEV and PMV. The name Huasteco refers to the indigenous people of important Serrano producing areas in Mexico. An all purpose chile for heat lovers, Serrano Huasteco is not only fiery but also very flavourful, and most popular in Mexico City's markets . 78-80 days.
