Paprika   Paprika is the Hungarian word for pepper, but today it has come to mean a particular flavourful spice . The actual chile is a fleshy pod, cultivated in Hungary over the centuries to give maximum flavour, a deep red colouring and variable heat levels. Heat level is 0-1. The pod is quite broad and can be pointed, elongated, heart-shaped or aubergine shaped. It is not related to the Hungarian Sweet Pepper, but is related to the Spanish paprika pod called Pimento.

Pasilla

 

Mexican Heirloom, early 1900's. This dried chile is one of Mexico's most highly regarded chiles, along with the Ancho and Mulato chiles. The Pasilla is also called Chile Negro (black chile). In its fresh form it is known as the Chilaca. It turns from dark green to purpled dark brown as it ripens. Pasilla means small raisins, alluding to its grape-like flavour and not its size. The Pasilla, sometimes wrongly called a Mulato, grows between 15-23 cm in length and 2.5-4 cm in diameter. Heat level is 3 -5, between 1,000 to 1,500 Scoville heat units. 80 days. (Capsicum annuum)

80 days. Pasilla means 'little raisin' in Spanish, referring to the wrinkled, deep brown dried pods and raisin-like aroma of this flavourful chile no good cook should be without. The elongated, cylindrical pods measure 6 to 8 inches long and an inch wide. Delicious either fresh or dried, at the immature stage the beautiful fruits are a remarkable, glossy, deep forest-green colour that matures to dark chocolate brown. The TMV resistant plants grow 2 to 3 feet tall, with branches beginning 5 to 6 inches from the low stem so pods don't touch the ground. The dried pods of this delicious pepper form the basis for the rich complex flavour of Mole sauces where no heat is required. Heat level is 0.5 (Capsicum annuum)

The best quality Poblano chile is quite big, over 10 cm. in length and 6 cm. wide, with a conical shape and one well defined crevice running along the whole length of it. It's got thick walls, sometimes undulating, which give it varied forms in its ripe state. It is not very hot, with a strong and agreeable scent. There are three type of fresh Poblano chile: green, blackish and heart-shaped. The one with the highest production and most popular in the market is the green Poblano. When in ripens, it takes a dark red colour and is called "chile Ancho". 1,000 to 1,500 Scoville units. The most important production zones are in the semi-desert valleys in the center of the country, such as the states of Guanajuato, San Luis Potos Durango, Aguascalientes y Zacatecas. During winter the Poblano usually comes from the Pacific Coast, in the states of Sinaloa, Nayarit and Jalisco. There is also a type of Poblano chile that is heart shaped an is cultivated mainly in the state of Durango. It has a lighter shade of green, hot and is called heart-shaped chile. Most of it is consumed locally and the demand for this type of chile is low. When dehydrated, the green Poblano chile is better known as Ancho or Mulato. The difference between them depends on a pair of genes that make the first one ripen to a dark red colour while the second becomes a dark brown, almost black. When they are fresh, they are difficult to identify, but when they become dried, it becomes very easy. The blackish Poblano chile is a darker colour and has a slightly sweeter taste that the green Poblano. (Capsicum annuum)
