Guajillo [gwah-HEE-yoh]. Meaning 'little gourd'. The Guajillo, Cascabel (Rattle) or Catarina (Ladybug) chiles all belong to the group known as the Mirasol chiles. The Guajillo from Mexico is a beautiful russet red, translucent, thin-walled dried chile, measuring between 10-15 cm in length and between 2.5-3.25 cm in width. Most chiles grow hanging downwards (pendant). Guajillos grow upright, earning themselves an alternative name Mirasol (i.e. looking at the sun). Its delicate flavour makes it a favourite, especially for colouring, in all forms of New World cooking. Heat level is 2-4. The Guajillo, (which is related to the Pulla and the Costeno chiles), and the Catarina chile have long shapes. The Cascabel chile has a cylindrical shape; the seeds come loose from the placenta when dried and produce a sound like a rattle, which gives it its name.100 days. (Capsicum annuum).


Guajillo Costeno Mexican heirloom pepper from the early 1900's. In the cayenne family, this is a larger shiny, deep orange-red pepper with a sweet heat.

Guam Boonies From the island of Guam. Very hot. 1 inch long. (Capsicum chinense). Thin skinned green to orange fruit on a compact plant suitable for container growing. Heat level is 7. Peppers will grow upright unless they get too heavy to be supported by their stems.


Guantanamo F1 Hybrid 60 days. 2-3 lobed, smooth skinned and growing to 18.5cm long. Lime green in colour. Medium-thick flesh. Cubanelle variety.

Guardian Hybrid sweet pepper with a deep-blocky shape. Extremely productive in the spring, its vigorous plant delivers attractive dark green fruit. Guardian's tall plant sets fruit continuously, producing high yields over an extended period. Days to maturity is 72-76. Fruit Shape is 4-lobed. Deep-Blocky. Fruit Size is 3.75 inches by 4 inches. Fruit Colour is dark green to red. Disease resistance/tolerance is to BLS1, 2, TMV, PVY and TEV.

Guero [GWEH-roh]. The generic term for yellow chiles such as Hungarian Wax or Santa Fe Grande. From Northern Mexico and the Southwest USA.

Guindilla Medium-hot Spanish chile with a sweet flavour. Heat level is 3.


Gujurati An Indian variety.

Gulbarga A town in central south India which grows a particular chile which is sold (erroneously) as the Kashmiri chile. Consequently, it is called the Mock-Kashmiri. The Gulbarga, with its long thin wrinkled fleshy appearance does not remotely resemble the true Kashmiri, despite its nice crimson colour, neither does it have the flavour of the Kashmiri. Heat level is 4.

Gumdrop A compact plant growing to 18' inches. Produces medium green leaves and a profusion of fruits the size, shape and colour of gumdrops. The pepper is very hot.


Gunpowder The bush grows dense and relatively low (30cm) and has slightly darker green leaves than a Thai or Cayenne. The yield is prolific.  The small buds start out almost black and change to the colour of aubergine until they get about 10 - 15mm long. At this point the side of the chile which faces the sun goes green. This appears to happen in a day or so. As the pepper matures and gets to about 2 - 3 cm long, it turns entirely green and stays that way for several days. It then goes into a multicoloured phase of greenorange/red and ends up entirely red. The insides are dense and packed with seeds and the flesh is relatively thick. Heat rating is about a 6 to a 7.
a Thai.

Guntur A district of India, north of Madras, with prolific chile growing. The Guntur or Andra chile is about 5 cm long by 2 cm wide, with a sharp point. It has a good deep red colour when dried and, is the chile most likely to be used as the major component in standard Indian chile powder. Heat level is 6-7.
