African Devil (Capsicum frutescens). Height about 1-1.2 metre. Seed colour is straw. Fruit: colour is green to bright red. Shape is conical. Position is erect. Size 10-20mm long, 5-7mm diameter. Flesh is very thin. Calyx is cup shaped with more than one per node. Petals have an white outer edge, greenish inner, the petals of the flower are revolute. Stamen is purple. Very small and very hot.

Aji Spanish local name for Capsicum frutescens pepper.

Aji [Ahee]. Usually bright orange chiles South America and especially Peru, but sometimes yellow or brown. Its aromatic taste makes it superb raw in salsas or salads. Normally found at elevations below 1100m. Pepper grows to 7.5 cm long by 2 cm wide. Heat level is 7. Seeds are rare and expensive. A long growing season of at least 120 days needed. (Capsicum baccatum var. pendulum). Sometimes called Aji Amarillo. 30,000-50,000 SHU.

Aji Amarillo Also known as Aji Escabeche. (Capsicum baccatum var. pendulum) The Aji Amarillo is the most common Aji in Peru. In the United States, it is sometimes referred to as the 'yellow chile' or 'yellow Peruvian chile'. The pods are 4 to 5 inches long and a deep orange colour when mature. The thin-fleshed pods have a fruity flavour with berry overtones and a searing, clear pungency. The Aji Amarillo is grown in all regions of Peru: the coast Andes and the Amazon Jungle. Harvest season on the coast, where most of the Aji Amarillo is planted, begins in mid-December and continues until late March. Heat level is 7.5

Aji Cereza (Capsicum annuum). The Aji Cereza is similar in shape to a cherry, thus its name, 'Cereza', which means cherry in Spanish. The extremely hot pods are very small and round measuring a maximum of 1 1/2 inches in diameter. The green immature pods develop into a deep red colour. This variety is found in all regions of the Peruvian jungle. No large scale commercial growing of Aji Cereza exists at present. Heat level is 9.


Aji Charapa (Capsicum chinense). Aji Charapa is wild variety of Aji found in the northern region of the Peruvian jungle, close to the city of Iquitos. In this area, the people are called "Charapas", thus, the name of the Aji Charapa is derived from their name. The Aji Charapa is very small with a spherical shape measuring a maximum 1/4 in diameter. The very hot pods are thin-fleshed and mature into a red and yellow colour. This variety is not grown commercially, but is harvested from wild plants.

Aji Habanero (Capsicum baccatum). From South America, it is not as hot as the variety from the Yucatan, but it has a similar spicy, smoky flavour. Conical, wrinkled 8-10 cm, orange-red peppers. 82-90 days to ripen.

Aji Limo Although this variety is referred to as the Aji Limo, the word 'Limo' has no real meaning nor translation and is a regional identification name given to it by the local people. The pod is small and measures 2 to 3 inches long by 1 to 1 1/2 inches wide. Aji Limo has a red and yellow pod colour that ripens into a deep red, yellow or orange colour. When dried, this Aji becomes tapered and wrinkled. It is mostly grown and used on the northern coast of Peru. (Capsicum chinense). Heat level is 7.


Aji Limon (Capsicum baccatum var. pendulum). 4.5cm long by 2cm wide. Pale yellow-green to lemon yellow when ripe. Thin walls. Elongated and flattened pod tapering to a point. An Andean Aji type. Large bush plant. Heat level is 7. Originally found in the Peruvian lowlands. Easily oven-dried at 190degC.

Aji Mirasol A cross between an Aji Colorado and a Mirasol, producing a shorter, thin skinned, brown pepper. (Capsicum baccatum). Also know as Aji Amarillo and Cusqueno. Heat level is 2.5

Aji Mono (Capsicum baccatum). The name of the Aji Mono relates to 'monkey' Aji. The pod measures 4 to 5 inches long and 3/4 inch across. The Aji Mono pod is a bright scarlet and is slightly curved with a tapering point. This variety is grown in the Peruvian jungle and found only locally. Heat level is 7

Aji Norteno (Capsicum baccatum). The name of the Aji Norteno translates to 'northern Aji' because it is a variety that is only popular in the northern coastal valleys of Peru. Ripe pods mature to yellow, red and orange colours and measure about 3 to 4 inches long and 3/4 inch across. Its shape is slightly curved and tapering to a point that is ideal for decoration of plates either whole or cut in rings. The Vir and Lambayeque valleys, about 1,000 km north of Lima, are the main production areas. Heat level is 6.

Aji Oro (Capsicum baccatum var. pendulum). 8cm long by 1cm wide. Matures to lemon yellow. Elongated cylindrical pod tapering to a point. Andean Aji type. Thin walled. heat level is 7. Also known as Aji Amarillo and Penn's Golden. One of the hottest varieties of C. baccatum var. pendulum.

Aji Panca (Capsicum chinense). Grows to 5 inches long and 1 inch wide. Aji Panca is the second most common Aji variety in Peru and is grown mainly near the coast. This variety measures 3 to 5 inches long and 1 to 1 1/2 inches across. The flesh is medium thick with a berry flavour and fruit overtones. It has the same fruit shape and appearance as the Aji Amarillo, but is a deep red to burgundy colour when ripe. Heat level is 2.


Aji Panca Improved (Capsicum baccatum).

Aji Peruvian Small red pod with thin skin and ribbed flesh.

Aji Picante (Capsicum annuum). Plants are annuals, ranging in various types from 1 to 6 feet in height, much branched. Leaves are elliptical to lanceolate. Plants continue to flower and set fruits from midsummer until frost, so fruits in all stages of development are on plants at the same time.

Aji Pineapple A South American pepper with a citrus taste. Grows on a compact bush. Earlier ripening variety. Ripens from green to bronze.

Aji Pinguita de Mono (Capsicum annuum). The Aji Pinguita de Mono is known all over Peru because of its unique name, which translates loosely to 'little monkey dick', because of the pod's size, shape and colour. The pods are very small, elongated and pointed, measuring 1/2 to 1 inch long. The pods mature to a deep red colour. This variety is among the hottest of the little Aji's known in Peru. The Aji Pinguita de Mono is found in all regions of the Peruvian jungle, mainly in the central valley of Chanchamayo. This Aji is not grown commercially. Heat level is 8-9

Anaheim [AN-uh-hime] The green Anaheim chile is a variety which was cultivated as far back as 1900, for canning, in a factory in Anaheim, California. Also known as California Chile and Chile Verde. Developed from Pasillas in New Mexico, it was the ninth version, which was the ideal size for canning - a very precise 15 cm long by 4 cm wide and with minimal heat level. With its modest heat level it is widely used for all purposes. Heat level 2. 1,000 to 10,000 Scoville heat units. Prolific bearers of long, thin, 2-celled fruits. May be used green or red - hotter when red. Red chiles are left on the bush until turning leathery, then dried in the sun to later be ground into powder and sold as Chile Colorado. (Capsicum annuum). 78 days. Susceptible to Serrano golden mosaic bigeminivirus. Plant grows with s slightly spreading habit.

Ancho [AHN-choh] Generic name. Pods to 7.5 cm long by 5 cm wide. It ripens to a deep red colour and has an aromatic fruity taste. Ancho means 'wide', its flat heart shape creating one of the largest chiles. Heat level is 4. 1,000 to 1,500 Scoville units. (Capsicum annuum). Only in its fresh green state is the Ancho referred to as a Poblano. Plant is multiple-stemmed and fairly compact, growing to about 25 inches. The corollas are white are appear at every node on the stems.


Ancho Chino Smaller and more wrinkled than the larger, related Ancho. 10-15 cm long by 7.5 cm wide. It is very dark brown, almost black, in colour, and has an aromatic fruity taste.

Jan Antohi was a touring acrobat when he defected to the U.S. In late 1991 he visited his family in Romania for the first time in over 8 years and came back with seeds of this heirloom pepper.
