These reviews are my own opinions based upon personal tasting sessions. Most of these sauces are now available in your local supermarket. The reviews of the 'rarer' sauces include a URL where possible. I have no monetary gain in these reviews, and I am grateful to those people who have sent my bottles of sauce to review, without any conditions attached.

| Available from most Supermarkets in 150ml bottles. Made from rice vinegar, chili peppers, salt, starch and antioxidant E300. Sauce does contain small seed pieces. | I would rate this as a 2/10 on the heat scale. The sauce is quite thick when poured and is more of an addition to a stir-fry, or as a dipping sauce. The rice vinegar doesn't taste as strongly as the vinegar/spirit vinegar used in other commercial sauces. Ideal for beginners wanting only limited heat! |

Sauce does contain very small seed pieces. | I would rate this as a 6/10 on the heat scale. The sauce is quite thin when poured but packs a good punch and has a nice taste. If you're on a day trip to France, pick up a few bottles. |

| Available from French Supermarkets in 5.5oz-155g bottles. Made from Scotch Bonnet peppers, vinegar, salt, mustard, onion and garlic. Produced in St. Lucia, West Indies for Baron Foods Ltd. Sauce does contain both seed and flesh pieces. | I would rate this as a 6/10 on the heat scale. The sauce is the opposite of the 'Classic Sauce'. It is yellow in colour with red flecks of pepper flesh. It is quite thick when poured. The mustard is apparent in both the aroma and the taste. |

| Available in the U.K in Tesco supermarket in 265g bottles. Made from tomato puree, water, red chilli, glucose syrup, malt vinegar, sunflower oil, salt, onion powder, modified starch, garlic powder, citric acid, cayenne pepper, acetic acid, guar gum, lactic acid and potassium sorbate. Although advertised as 'Classic North American', it is actually made in the U.K. under license from a Canadian company. Sauce does contain both small seed and flesh pieces. | I would rate this as a 0/10 on the heat scale. This is a sweet tomato sauce with 'added extras', especially acids. Note that acetic acid is a major component in malt vinegar. The type of 'red chilli' is not specified but I suspect it's sweet bell rather than hot pods. The named variety of cayenne appears way down the list of ingredients. One of the few sauces where I thought I had wasted my money. |

Made from red and orange habanero peppers, vinegar, cayenne, smashed garlic, chipotle peppers, pepper extract, lime juice, cilantro, herbs and spices. No seeds. Produced in New Jersey by Gardner Resources, Inc. | I would rate this as a 10/10 on the heat scale. This is the hottest sauce I've tried so far. It contains pepper oil extracts that really boost up the heat level. One tiny sip was enough to send me into orbit for the next half an hour. It took my breath away, made my eyes water and cleared out my sinuses. DON'T MESS ABOUT WITH THIS SAUCE !! Sauce is almost black in colour but with a reddish tinge. It is fairly thin but has an oily appearance. I couldn't really taste the sauce due to the rapid onsite of heat ! |

VERY HOT sauce. One small sip was enough to induce me and several work colleagues into
gasping for breath. It also made our eyes water ! Sauce is almost black in colour but with
a reddish tinge of oil. It is thicker than the After Death Sauce and has a better 'chile'
taste. If you want a HOT sauce, try this one first.

| Available in in 5oz-147gr bottles. Made from vinegar, water, imported and domestic peppers, garlic and assorted African spices. Sauce does not contain seeds. Available in the U.K by mail order from Hot-Headz! | I would rate this as a 10/10 on the heat scale. WOW! This is the hottest sauce I've tried that doesn't contain pepper oil extracts. The sauce is dark brown in colour and looks like 'H.P. sauce', but watch out for the kick! A small amount really makes you sweat. It's so hot that the level in the bottle is going down only very slowly and the flow restrictor has been left in place. There is nothing subtle about this sauce, it's hot and it's tasty. |
| Busha Browne's 'Pukka Hot Pepper Sauce' | |
| Available in the U.K. in 5oz-150ml bottles. Made from water, hot peppers, modified starch, salt, vinegar, onion powder and preservatives (E221, E223). Produced in Jamaica for Busha Browne's. Although not stated in the ingredients list, the label does state, 'Extra hot and fiery, made with authentic Jamaican Scotch Bonnet peppers'. Sauce does contain seeds. | I would rate this as a 6/10 on the heat scale, even though peppers appear only second on the ingredients list. The amount of water in the sauce means that the heat is tempered and that the sauce is quite thin when poured. It is also expensive when compared to other sauces. |

| Available from the USA in 5oz-140ml bottles. Made from water, crushed red hot peppers, tomato paste, vinegar, salt, modified food starch, garlic and spices. Contains large amounts of seeds and flesh pieces. | I would rate this as a 3/10 on the heat scale, even though
peppers appear second on the ingredients list. This was surprising, I expected more from a
sauce with so many seeds in it. The potential for good heat was there but it was at a very
disappointing low level. Slight spicy smell. Dark reddish-brown in colour. I'll retry this
sauce again when I get hold of another bottle as I'm sure it should be better. A second bottle was a lot better. The high level was slightly higher at 4/10 but the taste was much improved. I suspect the first bottle wasn't stored properly. |

A green sauce with a distinctive smell of onions. Fairly thick (remove the plastic flow restrictor!) Recipes on the side of the bottle. The first sauce I've tried that has sweet peppers as well as hot peppers. |

| Made in Mexico in 150ml bottles. Contains water, Arbol and Piquin peppers, salt vinegar, spices and a stabiliser. Available in the UK from Tesco. | I would rate this as a 2/10 on the heat scale. Very little heat from the Piquins, but you can smell the Arbol chiles. Has a unique wooden screw cap. |
| Crazy Charley 'Jalapeno Heaven Pouring Sauce' | |
| Made in the USA in 283ml bottles. Sauce contains no seeds and is a reddish-brown colour. Made from catsup, red jalapeno peppers, vinegar, mustard, brown sugar, Worcestershire Sauce, onions, garlic and xanthan gum. Available in the UK by mail order from Hot-Headz! | I would rate this as a 2/10 on the heat scale. The sugar and the catsup tone down the heat level. Although initially looking like a slightly darker coloured Tabasco clone, the Worcestershire Sauce gives an added kick to the flavour, as does the mustard. |

| Available in the U.K. in 3oz-89ml bottles. Made from ripe red peppers, distilled vinegar and salt. Produced by Baumer Foods-New Orleans. Sauce does not contain seeds. | I would rate this as a 2/10 on the heat scale. The sauce is a bit too vinegary for my taste. Although this sauce looks like a Tabasco clone its been around a lot longer, especially in south Mississippi and Louisiana, where its taste is much preferred over Tabasco. |

Produced in Canada. The label advertises that fact that the sauce is cholesterol and fat free. Sauce does not contain seeds. As there are no preservatives, the bottle should be refrigerated after opening. | I would rate this as a 2/10 on the heat scale. The sauce is quite thick. It is a brownish-red in colour and has a distinctive smell from the added spices (which are not stated). A slight smell of vinegar is also present. The spices also come through on the taste. A useful sauce where some flavour, but only slight heat, needs to be added to a meal. |

The sauce is a brownish-red in colour with no taste from the vinegar. The burn takes the form of a slow build up to a peak about 10 seconds later, that then lasts for 10-15 minutes. Too much causes sauce causes pins-and-needles on the inside of the cheeks!! Not for the faint hearted. |

It's like the Hurtin' Habanero Sauce, but with the extra heat kick from the pepper extract. It's one of the few sauces I've tried that has soy oil in it. I'd go for the Hurtin' Habanero Sauce is you don't like too much tomato! |

Made from vinegar, habanero peppers, papaya, onion, honey, ginger, garlic, mustard and spices. Available in the U.K by mail order from Hot-Headz! | I would rate this as a 6/10 on the heat scale. The sauce is nice and thick and the plastic flow restrictor needs to be removed from the top of the bottle. Don't be put off by the colour. The papaya improves the flavour but tempers the heat. Ideal if you want a slight 'curry' flavour added to a meal. |

Has no preservatives or artificial colourings. | I would rate this as a 7/10 on the heat scale. The sauce is nice pouring consistency. The bottle cap has a flow restrictor built in. A good general purpose sauce when heat is required but not excessive flavourings. On a par with the 'original' Walkers Wood Jonkanoo sauce. |

Made from apricots, onions, peppers, cane sugar, chillies, garlic, pectin and citric acid. | I would rate this as a 5/10 on the heat scale. The sauce is very thick and pours very slowly. With the apricots, the sauce is both warm and sweet tasting. As with the mild sauce, I found it to be an ideal dipping sauce. With my heat tolerance level, I preferred this version. The bottle was soon finished off. |

With the apricots, the sauce is both warm and sweet tasting. I found it to be an ideal dipping sauce for large tiger prawns. Yum! |

Sauce contains a few seeds. | I would rate this as a 3/10 on the heat scale, even though peppers appear first on the ingredients list. A run-of-the-mill chile sauce that doesn't stand out. The flavour would be OK except for the overpowering taste of vinegar. The peppers are not hot enough though, a hotter variety of peppers would make a difference, as would a change from spirit vinegar to cider vinegar. A fairly easy to find sauce in the UK. |

This sauce is a replacement for the 'Original West Indian Hot Pepper Sauce' reviewed above. The change to scotch bonnet and habanero peppers from 'capsicum' peppers has dramatically improved the heat level. The smell and taste of the spirit vinegar is also less intrusive. |

Sauce contains no seeds. | I would rate this as a 7/10 on the heat scale. The artificial colourings really make a difference - the sauce is almost a fluorescent green in colour! A nice slow heat build up with no bad aftertastes. Very enjoyable, even though it comes in small bottles. |

Sauce contains very few seed or flesh pieces. | I would rate this as a disappointing 2/10 on the heat scale. The sauce is a very dark brown and quite a thin consistency and looked very promising. The tomatoes make the sauce very sweet. With peppers a very poor 10th on the list, the heat for a 'hot sauce' is very disappointing. |

Sauce has seed and flesh pieces. | I would rate this as a 5/10 on the heat scale. Although the label refers to the 'Golden Habanero', these are not the main peppers used in the sauce, hence the heat level is a bit lower than expected. A pale yellow/brown in colour. The cumin and the mustard come through in the aroma. Useful when flavour is required more than heat. |

Sauce is full of seed and flesh pieces. | I would rate this as a 4/10 on the heat scale. The bottle label states that this sauce is 'hot n tasty'. Sauce is green in colour and quite thick. The aroma of the jalapeno peppers really comes through. A good alternative to the Iguana Red sauce, (and preferred by me!). |

Sauce is packed full of seed and flesh pieces. Peppers total 65% of the sauces content. | I would rate this as a 8/10 on the heat scale. This is one of the hotter sauces that doesn't contain 'pepper extracts'. A good long burn. Not so much a sauce as a salsa, it is VERY thick, pours slowly and seems to be all pepper. |

Made from cayenne peppers, carrots, tomato paste, onions, garlic, cane vinegar, cane sugar, corn starch, sale and molasses. Added ascorbic acid and sodium benzoate. Sauce contains no seed or flesh pieces and is very 'smooth'. | I would rate this as a 3/10 on the heat scale. The bottle label states that this sauce is 'moderately hot'. Red in colour, the sauce is quite thick; it's almost like a puree in its consistency. The vinegar comes through in the smell but does not impact the taste too much. A good alternative to Tabasco sauce if you want the same sort of heat. |

Made from vegetables (carrots & beetroot), chile peppers, rape seed oil, salt, modified starch, coriander, caraway, citric acid (E330) and garlic. | I would rate this as a 1/10 on the heat scale. A chile pepper paste that is well bulked out with carrots and beetroot. The coriander and caraway spices can just be tasted. |

| Made in Tunisia. Available in most supermarkets in tubes (70g is the most common size). Made from 'red hot' pimentos, garlic, condiments and salt. | I would rate this as a 2/10 on the heat scale. Not really a sauce but a chile pepper paste, the flavour is fairly bland (a little of the garlic comes through), so sauce is good for meals where only a gentle heat is needed. |

| Made in California. Available in the U.K by mail order from Hot-Headz! Supplied in 141g-5oz bottles. Made from chipotle peppers, water, onion, garlic, vinegar and spices. Sauce contains finely ground seed and flesh pieces. | I would rate this as a 2/10 on the heat scale but with a useful taste. The chipotle peppers make this sauce different from the run of the mill sauces. It's one of the few to contain chipotles. It has a spicy aroma. Worth trying if you need taste without high heat. |

The flavour of the orange habanero peppers in the sauce really does come through and makes dishes taste that little bit different, so that they stand out from the crowd. A good choice if you need to overcome both blandness as well as a lack of heat in a meal. |

No preservatives, so keep in the fridge once opened. |

Sauce does contain seeds. | I would rate this as only a 4/10 on the heat scale, even though peppers appear first on the ingredients list. The garlic is noticeable but not intrusive. Very sweet from the sugar and fructose. |

Sauce contains lots of seeds. | I would rate this as only a 5/10 on the heat scale. Not really a sauce but a hot chile pepper paste. Useful for adding to any dishes normally needing quantities of chopped fresh chile peppers. |
