Quick Beef & Black Bean Chili Posted by: "jenntinysam" jlbart1974@earthlink.net jenntinysam Thu Dec 14, 2006 8:40 am (PST) Quick Beef & Black Bean Chili 1 pkg. fully cooked beef pot roast with gravy 2 cans (14-1/2 oz. ea.) chili-seasoned diced tomatoes 1 can (15 oz.) black beans, rinsed and drained 1 TB chili powder 1/8 tsp. ground red cayenne pepper, optional Garnishes: Chopped fresh cilantro Sliced green onions Shredded Cheddar cheese Sour cream Remove pot roast from package; transfer gravy to Dutch oven. Add tomatoes, beans, 1 cup water, chili powder and red pepper; bring to a boil. Reduce heat; simmer 15 minutes, stirring occasionally. Cut pot roast into 1/2" pieces. Add to chili mixture; heat through. Serve with desired toppings. Serves: 6 to 8.
