Pumpkin Black Bean Turkey Chili Posted by: "AJ" aj788888@yahoo.ca 2 tablespoons vegetable oil 1 cup chopped onion 1 cup chopped yellow bell pepper 3 cloves garlic minced 1 1/2 teaspoons dried oregano leaves 1 1/2 tespoons ground cumin 1 1/2 teaspoons chili powder 2 cans 15 ounces each black beans rinsed and drained 2 1/2 cups chopped cooked turkey 1 can 16 ounces canned pumpkin 1 can 14 1/2 ounces diced tomatoes undrained 3 cups chicken broth 1/2 cup cream sherry Heat oil in large saucepan or 4-quart Dutch oven over medium heat. Add onion, yellow bell pepper and garlic, saute 8 minutes or until soft. Stir in oregano, cumin and chili powder. Cook 1 minute longer. Stir in black beans, turkey, pumpkin, tomatoes with liquid, broth and sherry. Bring to a boil, stirring occasionally. Reduce heat, cover and simmer 45 minutes. Dark turkey meat works well in this recipe.
