I freeze it in small containers and take it to work for lunch. 5 lbs lean ground beef 3 lbs Sausage (I use Jimmy Dean it is quite lean) 1 link Longaniza 1 link Chorizo 6 - 8 oz Tomato paste 2+ oz Mexican Chocolate 2+ Tbsp Brown Sugar 4 or more medium to large onion. At least two sweet. 4+ Habenero pepper 4 Jalapeno pepper Green 4 Jalapeno pepper Red 1 Large Anaheim pepper 1 Green Bell pepper 1 Pablano pepper Healthy dash Tabasco 1+Tbsp Healthy dash Worstershire 1+Tbsp 3+ Tbsp Cumin 1 medium to large carrot 2 large Tbsp Beef Stock paste 1 large Tbsp Chicken Bullion paste 1 1/2 cup dark Chili powder 1+ Tbsp Cayenne pepper 1+ Tbsp White pepper 1+ Tbsp Paprika 1 14 oz can chicken broth 1 102 oz can diced tomatoes Healthy squeeze Ketchup 1/4 - 1/2 cup 1 - 2 Tbsp Chili Pepper flakes Lots of garlic 6 - 8 medium to large cloves peeled and pressed added as noted optional; Celery Cinnamon Oregano Bay Leaf Add tomatoes, ketchup and paste to pot and begin to heat. Warm chicken broth and beef crystals in saucepan with chocolate added.Chop peppers and grind carrot. Sautee half of peppers and add to pot. Add remainder of peppers to meat while browning. Mix all powdered ingredients together and add to meat 2 or 3 Tbsp per 2 lbs or so. Sautee' onions and one clove of garlic and add to pot. Brown meat with crushed garlic, powdered ingredients and add to pot. If meat dries out while browning after adding spices, add 1/4 or so cup of liquid (chicken broth etc) to meat mixture. Bring all ingredients to about 200o F to assure cooking of sausage and lower heat and simmer for a couple of hours or so. These are basic instructions as best as I remember. I don't think I have ever made it the same way twice, but it always seems to get eaten. Although at times I do notice some discomfort on the other side of my body from my belt buckle...
