Killer Chili Verde by Joe Steel http://www.mtbr.com/passion/messages/345969.html 3 lbs pork shoulder (sometimes called "butt" I don't know why) 2 TBS olive oil 1 large onion (diced) 1.5 TBS minced garlic 3-5 pickled jalapeno peppers (cut into strips) 2 7-oz. cans Salsa Verde 1 8-oz can mild green chiles (cut up) Cut pork into 2" cubes and set aside. In skillet, heat oil and add onion and garlic -- saute until limp. Add sliced jalapenos and saute 1 minute more. Remove from skillet and place in slow cooker (i.e., crock pot)(can also be done in stew pot on stove). Add pork to stew pot. Add green chiles and salsa verde to pot. Bring to boil. Reduce heat, cover and simmer for 2 hours. let cool. refrigerated over night. Heat and serve. Supposed to make 6 servings. Great alone (with tortillas on the side) or served over rice. It's SMOKIN'!
