Kentucky Apple Cookoff Chili from http://members.eastky.net/ Ingredients: 2 lbs ground chuck 3-4 middle size yellow onions 2 cans Lucks Hot Chili Beans 1 jalapeno 1- quart whole tomatoes 1-quart tomato juice Catsup Chili Power Salt Black Pepper Garlic Power Brown Sugar Vegetable Oil Chop Onions and set aside. Chop Jalapeno (use gloves) into small (1/8th Inch) pieces. In a large thick NON-Aluminum cooker, combine 4 Tbsp. of Vegetable Oil, 2 tsp garlic power, 4 Tbsp of Chili Power, Ground Chuck, chopped Onions and Jalapeno. Fry until Ground Chuck is just done nearly brown. Open Chili Beans and pour into a ZipLock Bag, squeeze air out, zip and lay on hard smooth surface, smash beans with rolling pin or bottom of a plastic glass, etc, until all beans are flat, pour and scrap into cooker. Add quart of tomato juice (two if you like it juicy) and about 14 ounces of catsup and 10 more Tbsp. of chili power. Simmer for about an hour. Taste, add salt to taste, a heaping Tbsp of Brown Sugar and more chili power if necessary. Cook fifteen more minutes. Let stand another hour. Enjoy!! http://members.eastky.net/
