Keith Wyant's Prize Winning Chili by Keith http://www.jandw.com/keiths_chili.htm J&W Scientific Incorporated Winner of the 2000 J&W Chili Challenge 5 strips of cheap, fatty bacon. 5 cloves of garlic (the more the merrier) 1 large onion (white, red, yellow; your choice) 3 pounds of ground beef (22% fat was used in this recipe) 4 cans of dices tomatoes (I used a mixture of plain, Italian Style, and Mexican Style; that's all I had in the pantry) 4 cans of dark red kidney beans (I used the cheapest brand) 2 packets of Chili seasonings (cayenne should be one of the ingredients) 1 tbsp of Chili Powder (Or two; your choice) 1 tbsp of Chinese Hot Oil In large pan, sauté bacon with garlic and onion over medium heat. Don't crisp bacon; leave it soggy. Add ground beef and cook until done. Stir in one packet of Chili seasonings and mix well. While meat is browning, in large pot, heat tomatoes, kidney beans, second packet of Chili seasonings and Chili Powder. Stir. Add the seasoned beef to the tomato/bean pot and mix well. Simmer for one hour. When done, add Chinese Hot Oil and mix well (I did this the previous night and lost the "heat" over night after cooling, but the flavor stayed). Serve. Enjoy! Keith
