Kate's Veggie Chili posted to rec.food.cooking http://groups.google.com/groups?selm=775dmv%24btu%241%40nnrp1.dejanews.com&oe=UTF-8&output=gplain 1 carrot, sliced 1/2 cp. diced onion 1 medium squash, sliced 1 medium zucchini, sliced 1-2 large cans diced tomatoes 2 medium potatoes, cubed (I parboil to soften) 1 cn. chick peas 1 cn. kidney beans 1 cn. black beans 1 cn. navy beans 2-3 tbsp. chili powder 1 tsp. cumin pepper vegetable oil Saute onions and carrots in vegetable oil. Mix with all the beans, tomatoes, potatoes, and seasonings. Bring to simmer and continue simmering for 1 hr. Add zucchini and squash. Continue simmering for 1-2 hrs. Top w/ your favorite chili topping (sour cream or cheese might be nice) and serve. Kate
