Yankee Chili http://www.biggsuperstore.com/tbsrecipes/soupsandstews/chili/yankeechili.htm 1/2 pound of dry pinto or kidney beans Two 28 ounce cans of tomatoes 2 large green peppers, chopped 2 medium onions, chopped 2 cloves garlic 1/2 cup of parsley 2 pounds of ground beef 1 pound ground pork 2 1/2 tablespoons of chili powder 1 teaspoon of pepper Wash beans. Put in a large bowl; add water to 2 inches above beans. Soak overnight. Simmer until softened; drain. Place in crock pot. Add tomatoes, green peppers, onions, garlic and parsley. In a large skillet sauté ground beef and ground pork for 15 minutes; remove grease. Add meats to crock pot. Season with chili and pepper. Mix well. Cover and cook on low for 8 to 14 hours, or on high for 4 to 5 1/2 hours, stirring occasionally. Yield: 6 to 8 servings.
