Wild Boar Chili from O'Neill Outside http://www.oneiloutside.com/recipes/boarchili.htm 3 pounds wild boar meat ¼ cup olive oil 1 quart water 1 or 2 cans Mexican chili beans 1 teaspoon ground oregano ½ teaspoon black pepper 1 medium chopped onion 3 tablespoons paprika 6 tablespoons chili powder or 2 oz box 5 cloves garlic, finely chopped 1 1/2 teaspoons salt 1 teaspoon ground cumin ½ teaspoon red pepper 1 tablespoon sugar Chop boar into small cubes by hand (a food processor does it too fine). Heat oil; add meat and brown over high heat. Add water and onions and simmer for two hours. Add chili beans and the remainder of the ingredients; simmer another 30 minutes. Serves 12-15
