Vegetarian Chili Newsgroups: rec.food.cooking 2 medium sized carrots, grated (approx. 8 oz.) 1 lg. onion, coarsely chopped 1 cup water 1 package Gimme Lean Beef (actually a soy product sold in 'health' groceries) 1 can crushed tomatoes 1 can pinto beans 2 tbs. chili powder 1 tsp. crushed red pepper flakes salt to taste diced jalapenos to taste In a 4-5 qt. stock pot, combine carrots, onion and water. Cook over high heat, stirring often until the liquid has evaporated and vegtables begin to brown and stick to the pan. Add the 'Gimme Lean Beef' crumble and brown. Add tomatoes and their liquid. Stir in beans and their liquid too. Add seasonings, bring pot to a boil; then reduce heat to a simmer. Cook uncovered until flavors are blended. Top with corn chips, grated cheese or whatever strikes your fancy.
