V8 Vegetarian Chili from Veg Cook Books 2 Tbsp vegetable oil 1 lg onion, chopped 1 small green pepper, chopped 2 cloves garlic, minced 1 Tbsp chili powder 1/2 ts cumin 2-1/2 cups V8 1 can (16 oz.) black or kidney beans 1 can (15 oz.) pinto beans In saucepan over medium heat, heat oil. Add onion, green pepper, garlic, chili powder and cumin and cook until onion is tender. Add vegetable juice. Heat to boiling. Cook over low heat 5 minutes. Add beans. Heat through. Serves 4
