From: "Melinda" Subject: Uncle Harold's Chili Date: 22 January 2004 11:49 This is what I grew up calling Chili, although it's not what most people call chili these days. Someone I know calls this type of dish chili beans :-) Whatever you want to call it, they're mighty good! My Great Aunt gave me the recipe, but I don't know where my uncle originally got it from... Melinda Uncle Harold's Chili 1 lb. pink beans 2 lb. ground beef 2 onions, chopped 2 tsp. chili powder 1 tsp. garlic powder salt and pepper Soak beans overnight. Drain and cook until soft (1-2 hours) in fresh water. Brown meat. Add chopped onion, chili powder, garlic powder, salt and pepper. Pour beans (with cooking water!) into meat and add water to your taste. Stir often. When water gets low, add more until beans are done and it looks good and thick. If needed, you can thicken the sauce with 2 tbsp. flour whisked into the chili. -- Rec.food.recipes is moderated by Patricia Hill at recipes@swcp.com.
