Real Chili http://www.wholefoods.com/recipes/realchili.html Serves 8+ Phase One 21/2 lb sirloin tip beef, cut into chunks 11/2 TB organic extra virgin olive oil 1 small onion, diced 6 cloves garlic, freshly pressed 3 cups chicken stock 8 oz tomato sauce 1 TB cumin 1 TB dry mustard 1/2 tsp oregano 1 small (4 oz) can diced green chiles 1 fresh jalapeño pepper, diced 1 tsp black pepper 1 tsp salt Phase Two 4 oz tomato sauce 4 TB chili powder 1 tsp to 1 Tb African Bird Pepper, to taste 2 TB cumin 2 cloves garlic, freshly pressed 12 oz of your favorite ale 1 TB Tabasco 1/2 TB brown sugar Phase One In a 4-quart heavy bottomed cooking pot, sauté meat in olive oil until well browned. Stir in the other ingredients and simmer, covered, 11/2 hours. Phase Two Uncover, stir in the remaining ingredients and simmer an additional hour or so. When cooked to desired consistency, smash beef chunks to shreds. Cook another 30 minutes to meld shredded beef with spices. Top with raw, freshly diced yellow onion, sour cream or shredded cheddar cheese. This is spicy, rich, and super-beefy, so be ready or beware.
