More squirrel recipes than anything else. I don't see why you couldn't substitute rat for any of these, all of them have strong flavors which don't really taste well in beef or pork recipes, so these recipes deal with that strong flavor. I'll write the muskrat chili recipe, let me know if you want want others. MUSKRAT CHILI 3 muskrats, ground or cut into cubes 3 large onions, diced 5 garlic cloves, pressed (or more if you like garlic) 1 qt whole tomatoes, with water 2-3 cans kidney beans, with liguid chili powder to taste grated cheese, onions, crackers, or whatever else you want to top chili Skin muskrats and remove all glands and fat. Parboil muskrats and onion for 45 minutes. Remove meat from bones and grind or cut into small chunks. In skillet, brown meat meat, adding onions and garlic. Then add remaining ingredients and simmer at medium heat for one hour.
