Mama's White Chili http://www.decaturdaily.com/decaturdaily/food/021113/chili.shtml 2 pounds chicken breasts, cooked and cubed 2 tablespoons olive oil 1 onion, chopped 3 cloves garlic, crushed 32 ounces cooked navy beans 32 ounces cooked Great Northern beans 28-ounce can diced tomatoes 1/4 cup Parmesan cheese 28 ounces chicken broth 1 tablespoon parsley 3/4 teaspoon oregano 1/2 teaspoon pepper 1 teaspoon salt 2 jalapenos, quartered 12 black olives, halved 1 tablespoon chili powder Heat oil in large saucepan over medium heat. Add onions and garlic to oil and sauté until tender. Mix in all other ingredients except cheese and heat until boiling. Reduce heat to a simmer. Add cheese and cook about 10 minutes longer. Serve with bread or crackers.
