Karen's Chili 2 lbs ground chuck 1 med onion, diced 1 large can tomato juice 1 8 oz can tomato sauce 1 clove garlic, minced 1 Tbsp chili powder to start, add more if necessary fresh celery leaves, diced 1/4 tsp cayenne pepper, more if you like it hot but taste as you add salt to taste fresh parsley, diced couple shakes of Tabasco sauce several green onions (including tops), diced water (just a cup or so) Wondra flour to thicken 2 cans chili or kidney beans (optional) Brown ground meat in large pot with med onion. Spoon out excess grease. Add remaining ingredients and enough water to make a nice pot of chili. Cook for at least 40 minutes to an hour. If you need to thicken it, stir in a little Wondra flour. Best if cooked longer to cook down the juices. Serve over rice or spaghetti noodles or just plain in a bowl with crackers. Top with shredded cheese. Karen [Ken's Wife] From: "Kenneth Stewart"
