Howler's World Renown Buffalo Chili http://ourworld.compuserve.com/homepages/creamster/chili_recipe.htm Ingredients: 2 lbs. fresh ground buffalo 1 med. onion, chopped 2 cloves garlic, minced 2 jalapeno peppers, finely chopped 1 red bell pepper, chopped 1 golden yellow bell pepper, chopped 2 27-oz. cans dark red kidney beans (drain half of fluid) 1 15-oz. can diced tomatoes (undrained) 2 tsp. seasoned salt (Lawry's or other similar) 2 tsp. ground comino (cumin) 1 tsp. cilantro leaves 1 tsp. ground black pepper 1/2 tsp. cayenne pepper Preparation: Brown the buffalo meat. (It is lean and clumpy, so add a little water, breaking it up as you cook it.) Stir in chopped onions and minced garlic. When onions become translucent, move to a crockpot. Add everything else. Mix well. Cook on low heat in crockpot for 8-10 hours, stirring occasionally (high heat 3-5 hours, stirring more frequently). Serves 6. Howler recommends: Serve with grated Monterey jack cheese and cheddar "goldfish." Enjoy with a favorite Mexican beer (Pacifico, Carte Blanca, Dos Equis or Corona). Sit in front of the TV and watch Peter Fonda, Dennis Hopper and Jack Nicholson in "Easy Rider." For a double feature, add "Roadside Prophets."
