Good For You Chili 28 oz Crushed Tomatoes 2 16oz cans pinto or red kidney beans. I usually soak and precook dried beans (about 2 to 2 1/2 cups). 1 16 oz can solid pack pumpkin 1 C. chopped onion 1 C. chopped red bell peppers 2/3 cup uncooked red bulgur wheat 1 4oz can chopped green chilies 2 1/2T. chili powder 1 t. cumin 1 t. minced garlic 1 t. salt In large pan combine 4C water and all ingredients except garnishes. Bring to a boil, reduce heat, and simmer uncovered 30-35minutes or until bulgur is tender. Serve garnishes in bowls at the table (light sour cream, shredded ff cheddar, sliced green onion, etc.). Makes 6-2Cup servings; 228 calories; 11g Protein, 45g Carbos, 2g Fat Also a bulgur salad recipe that is pretty good. Bulgur Salad Pour boiling water over 1 C. bulgur wheat. Let stand 15 minutes. Drain off excess water. Add 1/2 cup non fat plain yoghurt, 1 medium chopped tomato, 1 chopped and seeded cucumber, 1/2 t. sage. Chill and enjoy. Less than 1g Fat per serving. I used the leftovers to make sandwiches with fresh lettuce, tomatoes, etc. Excellent!!
