Good Chili from Hilary Gwilt This is my husband's 93-year-old-grandfather's recipe. Originally, it was "Damn Good Chili" and apparently his wife took exception to the cussing, so it has long since been renamed "Good Chili." It is relatively simple and very tasty. 1 Tbsp. paprika 1 Tbsp. pepper 1 tsp. cumin (and no more! don't be tempted-- trust me) 2 Tbsp. chili powder 2 Tbsp. salt (I start with 1 and add to taste) 1/3 tsp. cayenne pepper 4 pods red pepper (1 Tbsp. or to taste crushed red pepper) 2 cloves garlic, crushed 1 large onion, chopped 4 lbs. meat (hamburger or ground pork or ground turkey or combination) 2 quarts water Combine all but meat in a large saucepan and bring to a boil. Brown meat separately and drain. Add to boiling mix. Boil all till tender. Fish out the red pepper pods, if used, before serving.
