Gobbledy Good Chili by Gary & Tracey Dean Gary and Tracey Dean, Pryor, OK. Winners in the Chopped Turkey Competition 1 - 8 to 14 lb Honeysuckle White traditionally roasted turkey (or substitute 3 lbs Ground Honeysuckle White Turkey) 1 ea whole Anaheim Pepper and/or Red Chili Pepper (floaters) 1 large Onion finely chopped 1 Tbs olive oil - Health Nuts - substitute 1/4 cup turkey or chicken broth 1 28 oz can whole tomatoes - cheap ones are OK 1 15 oz can tomato sauce 2 cloves fresh garlic, pressed or finely chopped 1/2 fresh lime juiced - other half for Tequila 1 Tbs Lea & Perrins Worcestershire Sauce or cheap substitute 1/2 tsp Tabasco Sauce - accept no substitutes 1/2 tsp ground white pepper 1/4 tsp cayenne pepper 3 Tbs Williams Chili Powder (or cheap substitute) to taste 1 tsp celery salt 1 tsp ground cumin 1 1/2 tsp cilantro, dried or fresh -- finely chopped 2 1/2 Tbs brown sugar 3 oz quality tequila (worm optional) INSTRUCTIONS: Using your Grandmother's Family Recipe, roast an 8 to 14 lb Honeysuckle White Turkey, and serve no more than 1/2 of same in the traditional manner. If guests are present, DO NOT offer "leftovers" to take home. Get all the good leftover turkey meat, hopefully 3 to 4 lbs, and put it in a ziplock bag until tomorrow. The next day, cut the turkey (less skin and bones) into 1/4 inch cubes. If you are a purist, hand cube - if you're lazy (or time disadvantaged), give it a couple of spins in the food processor until it kind of looks cubed, "OK" to you. Since you decided to use the food processor, dump the turkey in a bowl, and finely chop the onion until it looks like mush. (The food processor saves tears). Saute (that's French for cook) the onion mush with the garlic in a little olive oil for a few minutes while you do other stuff. Since the food processor is already dirty, add the can of whole tomatoes and turn it into tomato juice. DUMP all the other stuff (except Tequila which you should taste to see if OK) into the pan with the onions. Simmer (that's French for cook real slow) for about an hour. Add a little water, wine, or other appropriate liquid if too thick, and add spices to taste. Just before serving, add 1 oz of tequila (if you have any left) and stir around in the pot. Bring the whole peppers to the top as "floaters" to enhance the "presentation" of the pot of Gobbledygood. If it doesn't taste quite right, add catsup (Ketchup) which will fix the taste of anything. Serve in the traditional manner.
