Gambler's Chili * 2 onions, chopped * 1 poblano, or bell pepper, chopped * 2 cloves garlic, minced * 1 tsp. fresh jalapeno pepper, seeded and diced * Oil * 4 lbs.. coarsely ground round or chuck * 6 Tbs. chili powder * 2 Tbs. cumin * 1 tsp. Tabasco sauce * Salt and pepper to taste * 1 (16 ounce) can tomatoes, crushed * 1 (8 ounce) can tomato sauce * 1 (4 ounce) can green chilies, chopped * Just enough water to cover Method: SautŽ first 4 ingredients in oil till tender. Add meat and brown. Add remaining ingredients using only enough water to make it soupy. Bring to a boil, lower heat and simmer for 2 1/2 hours. Test for salt and simmer another 1/2 hour.
