Ernie and Tom's Chili by Ernie and Tom http://www.stevens-place.net/~luxbndr/recipes/EandT-chili.html Step 1: Preparatory shots of whisky are highly recommended… Suggested blends are: Wild Turkey, Johnny Walker Black, or Bushmills. Step 2: Pour individual glasses of amber style beer for the chefs… Suggested styles are: Sunday River Alt, Carribasset IPA, or Murphy's Amber. Step 3: Let blend... Step 4: Oh shit... we should start preparing the chili. Step 5: Raw ingredients: 1 onion chopped and diced 1/2 green pepper-- chopped and diced 1.5 Lbs of ground beef 2-5 chili peppers chopped and diced (based on your own taste) 2-5 garlic cloves-- chopped and diced (based on your own taste) 3 links Hot Italian Sausage (Remove skin) 1 Tbsp Cumin 1 Tbsp Chili Powder 1/4 Tbsp Oregano Salt & Pepper to Taste 1 Tsp Sage Step 6: Sautee green peppers, onions, chili peppers and garlic in 1 Tbsp olive oil and butter, each until opaque. Step 6a: Add 3 oz. of your whiskey and 1/2 bottle of your favorite amber ale into the mixture and cook off for 3-5 minutes before continuing Step 6b: You also may need to drink another whiskey before continuing Step 7: Add seasonings-- Sautee another minute or two. Step 8: Add meat products (Sausage, Burger, etc.) and brown approximately 8-10 minutes. Step 9: Add 1 8 oz. can diced tomatoes, 2 fresh diced tomatoes, 1 small can (4oz??) tomato sauce, 1 can (at least) water. Step 10: Let simmer and add water as necessary for 30 minutes. Step 11: Add 1 16oz. can prepared beans (either kidney or pea, it's your preference) and bring back to a boil. Step 12: Let simmer at least 1/2 hour (yes, this is the minimum) and the longer the better adding water as necessary. Step 13: Dish and eat--- Enjoy!
