What I do (more or less...it ain't real chili like you'd get in Texas) onion, garlic, green pepper, and jalapeno sauteed in olive oil add some canned tomatoes (break up the tomato before you put them in the pot), put in some tomato sauce too add some pre cooked beans (whatever kinds you like. I use cranberry beans or pinto's usually: pre-cooked dried beans) add chili powder, powdered cumin, and a pinch o' salt (EZ on the salt) add a little honey (Tbsp), an ounce or so of baker's chocolate, a pinch of cinammon (don't over do this) and a splash of white vinegar: I got this from a Cincinatti Chili recipe. I like it... add some TVP granules (I use either flavored or unflavored. I don't think it really matters because the gravy is strongly flavored) Best cooked a day ahead Ed Hackett
