Shortening 2 lb. beef, boneless and trimmed of fat (cut into sugar cube dice) 1 tsp. hot sauce 8 oz tomato sauce 2 beef bouillon cubes 2 jalapenos, sliced in half In a large pot, melt the shortening and quickly sear the meat on all sides. Add the hot sauce, tomato paste, bouillon cubes, and one jalapeno. Barely cover with water. Simmer with pot covered for 1 hour, stirring occasionally. Add 1/3 of the spice mixture (see below). Add water as needed. When jalapeno becomes soft, remove, dice finely and return to pot. Add 1/3 of spice mix. Continue cooking for another hour, stirring and adding water as necessary. Add remaining spice mix, second jalapeno, and cook covered for 45 minutes. Remove top, cook uncovered for 15 more minutes (to fill your house with the appropriate mouth watering aroma) and serve in warm bowls with the condiments of choice. Dragon's Breath Chili Mix Ingredients: 6 Tbs. red chili powder (I use self roasted New Mexican Reds) 4 tsp. ground cumin 1 tbs. granulated onion 1 tsp. granulated garlic ½ tsp. salt ½ tsp. white pepper 3/8 tsp. cayenne ¼ tsp. dried oregano 1/8 tsp. crushed bay leaf Mix ingredients together, splitting into thirds if making chili now.
