David Skinner's Awesome Chili http://bentonrea.com/~sasquatch/chili/ This recipe began at college when I started adding things to canned chili to "fancy it up." Over time I added more and more stuff until one day I realized that so many ingredients had been added that the canned chili could left out. I can never make chili exactly the same way twice, but one day I wrote down what I was doing, so here it is. Hope you like it hot! Ingredients: 6 strips of bacon 1 large onion 1 large green pepper 1 to 15 jalapeņo peppers 2 pounds ground beef 1 packet of chili seasoning 2 cans, 24 ounce, of kidney beans 1 jar, 24 ounce, of chunky salsa 2 cans, 15 ounce, of mexican style sliced tomatoes Tabasco Sauce, to taste (I like lots) 1 pound of sharp cheddar cheese Cut bacon into bite size pieces. Chop the onion, green pepper and jalapeņo peppers and saute them over medium/low heat with the bacon until bacon is done and vegetables are golden brown. Drain grease. Brown ground beef over medium heat and drain. Put all ingredients into chili pot and simmer on low heat until hot. Serve with grated cheese on top.
