Brenda's Tasty Texas Chili posted to Virtual Texan http://205.172.60.10/comm/virtual/food/chili/brenda.htm Seasonings 3 1/2 Tbsp. chili powder 2 tsp. onion powder 3 tsp. garlic powder 2 tsp. cocoa powder 1 1/2 tsp. crushed leaf oregano 1/8 tsp. cayenne (more if you like it hotter) 1/2 tsp. cumin 3/4 tsp. cinnamon 1/4 tsp. cloves 1-1 1/2 tsp. salt Mix these seasonings together in a bowl and set aside. Ingredients: 1 lb. coarse ground emu meat 4 c. cooked pinto beans 4 c. diced tomatoes 1 ancho pepper 1 large onion 2 Tbsp. olive oil 2 1/2-3 c. vegetable broth (low salt or salt free) 2 cloves garlic Chop up onion, garlic, and pepper. Sauté the chopped vegetables with the emu meat in olive oil until the meat is brown. Add seasoning mix and stir in. Let simmer for a few minutes. Add the rest of the ingredients and simmer for 1-1 1/2 hours stirring occasionally. Enjoy!
