Amy's Kitchen Texas Chili from Amy's Kitchen http://www.geocities.com/Heartland/Estates/9879/texaschili.html 2 lb. stew beef 1 cup onion (chopped) 1 bell pepper (chopped) 1/2 cup celery (chopped) 1 can kidney beans 2 cans pinto beans 1 can whole kernel corn (drained) 2 cans Hunt's diced tomatoes garlic to taste 12 oz. tomato paste 2 1/2 cups water 2 jalapeno peppers (diced small) 1 1/2 tsp. chili powder 1/2 tsp. red pepper flakes 1/2 tsp. oregano 1/2 tsp. cumin Cook beef with all ingredients except corn and beans in crockpot 6 hours or so on low to medium low. About an hour before serving, add beans and corn. Turn up to medium or medium high and cook about 1 hour. This is great with Mexican cornbread.
