Amateur Radio Field Day Chili Here's a medium-hot chili I cooked up for the 1994 Amateur Radio Field Day. Don't be put off by the chocolate and peanut butter, as these flavours mix well with the hot spices. If I'm making this for fellow hot-food lovers I generally double the amounts of cayenne and crushed dried red pepper. Hope you like it. 1 lb fresh mushrooms, sliced 3 14 oz cans red kidney beans 1 14 oz can brown beans in tomato sauce, or pork & beans 3 14 oz cans tomatoes (puree in blender) or/ 2 14 oz cans Hunts crushed tomatoes plus 1 can water. 2 lbs minced beef or lean hamburger, browned 1 tsp crushed garlic (about 2 cloves) 1 tsp cayenne powder 2 tsp mild chili powder 1 tsp crushed red pepper or local fresh hot peppers to taste 2 heaping tablespoons peanut butter 1 square unsweetened baking chocolate Brown meat. Combine spices with tomatoes in blender. Combine all ingredients except chocolate and peanut butter in pot. Heat until warm, then add chocolate and peanut butter, stirring until they are mixed in. Bake at 300 F, or on the stove at low heat, for 6-12 hours, stirring regularly. You should not need to add additional water, as the tomatoes have plenty. Freezes well, tastes great!
